Vegan Roasted Red Pepper Pasta

if you love roasted red pepper and tomato soup you will LOVE this creamy pasta!

(serves 2-4)

what you'll need:

- 3 cups pasta

- 1 red bell pepper

- 1/2 yellow onion

- 3 cloves garlic

- 1/2 cup soaked unsalted cashews

- 3 tbsp coconut milk

- 1 tbsp olive oil

- 2 tsp tomato paste

- salt and pepper to taste

(you may want to add a bit more salt-make sure to taste before adding more!!)


- preheat oven to 375 degrees

- soak your cashews in hot water and set aside

- throw your chop the red pepper, onion, and garlic on an oiled pan and once your oven is preheated, throw them in for 20 minutes

- boil your water for your pasta while your peppers and onions are cooking

- after your veggies are cooked, throw them in a blender with you soaked cashews, coconut milk, olive oil, tomato paste, salt and pepper and blend well

- pour over your pasta and enjoy with some nutritional yeast or everything but the bagel on top :)
